  • 1 package Pillsbury biscuits (7.5 oz)
  • 1 package Taco seasoning (30g)
  • 1 1/3 cups salsa
  • 2 cups diced peppers (red, orange, yellow)
  • 1 cup diced onion (red onion)
  • 1 cup reduced fat shredded cheese
  • Green onions and fat-free sour cream for topping (optional)

Instructions

  1. Cook ground beef in a large frying pan over medium heat until browned. Stir in taco seasoning and simmer for about 5 minutes.
  2. Preheat oven to 350°F (175°C) and spray a 9×13 casserole dish with cooking spray.
  3. In a mixing bowl, combine cooked beef and salsa.
  4. Chop peppers and onions; cut each biscuit into six pieces.
  5. Layer half of the biscuit pieces in the casserole dish, followed by half of the meat mixture, half of the veggies, and half of the cheese. Repeat layers and top with green onions.
  6. Cover with foil and bake for 35 minutes; uncover and bake for an additional 15 minutes until golden brown. Let cool for 5 minutes before serving.
