  • 1 cup granulated sugar (plus more for rolling)
  • 1 large egg (room temperature)
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 18 chocolate kisses (or alternative chocolate topping)

Instructions

  1. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  2. Add the egg, vanilla extract, and almond extract. Mix until combined.
  3. In another bowl, sift together flour and baking powder. Gradually add to the wet mixture while mixing on low speed until fully incorporated.
  4. Cover the dough with plastic wrap and refrigerate for at least 30 minutes.
  5. Preheat oven to 350°F (180°C). Line two baking sheets with parchment paper.
  6. Scoop dough into balls (about 1.5 inches) and roll in sugar or sprinkles if desired.
  7. Place on prepared sheets, spaced two inches apart, and bake for 10-12 minutes until edges are barely brown.
  8. Immediately press one chocolate kiss into the center of each cookie after removing from the oven.
  9. Allow cookies to cool on sheets for five minutes before transferring to a wire rack.
