  • 1 teaspoon kosher salt
  • 1 pint strawberries (about 3/4 lbs)
  • ½ cup granulated sugar (for filling)
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 2 teaspoons ground cinnamon
  • 1 tablespoon unsalted butter (softened for dish)
  • 4 ounces cream cheese (room temperature)
  • â…“ cup powdered sugar
  • 1 teaspoon lemon juice

Instructions

  1. Prepare the strawberry filling by combining hulled strawberries, sugar, lemon juice, cornstarch, and water in a saucepan over medium heat. Cook until thickened and set aside to cool.
  2. In a mixing bowl, whisk together eggs and granulated sugar. Add softened butter and milk; mix until smooth.
  3. Gradually add flour, yeast, and salt until a dough forms. Knead on a floured surface for about 5-7 minutes.
  4. Place dough in a greased bowl and let rise for one hour until doubled.
  5. Roll out the dough into a rectangle and spread the cooled strawberry filling evenly on top. Sprinkle with ground cinnamon before rolling tightly.
  6. Slice into nine equal pieces and place in a greased baking dish. Let rise for another 30 minutes while preheating your oven to 350°F (175°C). Bake for about 25-30 minutes until golden brown.
  7. For the frosting, beat cream cheese with powdered sugar and lemon juice until creamy. Spread over slightly cooled rolls.
