  • 1 can (15 oz) white beans (such as cannellini), drained and rinsed
  • 3 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1 tablespoon lemon juice (freshly squeezed)
  • Optional: ¼ teaspoon red pepper flakes for heat
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss broccoli florets in a large bowl with 2 tablespoons of olive oil, garlic, oregano, smoked paprika, salt, and pepper until evenly coated.
  3. Spread the seasoned broccoli on a baking sheet in a single layer. Roast for 20-25 minutes until golden brown and crispy.
  4. While the broccoli roasts, heat remaining olive oil in a skillet over medium heat and sauté the drained white beans for about 2-3 minutes; season with salt and pepper.
  5. Once the broccoli is done roasting, combine it with the white beans in the skillet. Add lemon juice and red pepper flakes if desired. Toss gently to combine.
  6. Garnish with fresh parsley before serving alongside lemon wedges.
