  • 10 oz mushrooms (button or baby bella)
  • 2 large boneless skinless chicken breasts
  • 2 tablespoons salted butter
  • ½ cup all-purpose flour
  • 34 tablespoons olive oil
  • 2 ½ cups beef broth
  • 1 chicken bouillon cube
  • 3 cloves garlic (minced)
  • 3 tablespoons cornstarch
  • ⅓ cup heavy cream

Instructions

  1. Clean and slice the mushrooms, seasoning the chicken breasts with salt and pepper.
  2. In a skillet over medium heat, heat olive oil and brown the seasoned chicken for about 5-7 minutes per side. Remove from skillet.
  3. In the same skillet, melt butter and sauté mushrooms until tender. Stir in minced garlic and seasonings.
  4. Sprinkle flour over the mixture, whisking in beef broth gradually to avoid lumps, then add grape juice and soy sauce.
  5. Return the chicken to the skillet, cover, and simmer on low for 25-30 minutes. Mix cornstarch with water to create a slurry; add to sauce along with heavy cream and stir until thickened.
  6. Serve hot over rice or pasta.
