  • 14.75 oz cream style corn
  • 8.75 oz canned corn
  • 10 oz Rotel diced tomatoes and green chilies
  • 1 oz taco seasoning
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon onion powder
  • 3 cups shredded Mexican cheese blend
  • 17 oz Jiffy cornbread mix (2 boxes)
  • 2 large eggs
  • 2/3 cup milk

Instructions

  1. 1. Preheat the oven to 400°F (200°C).
  2. 2. In a large sauté pan, brown the ground beef over medium-high heat until fully cooked; drain excess grease.
  3. 3. Stir in the cream-style corn, canned corn, Rotel tomatoes, taco seasoning, salt, pepper, and onion powder; simmer for about 5 minutes.
  4. 4. Remove from heat and mix in 2 cups of shredded cheese until melted.
  5. 5. In a mixing bowl, combine Jiffy cornbread mix, eggs, and milk until just blended.
  6. 6. Spread the beef mixture evenly in a greased baking dish; pour the cornbread batter over the top.
  7. 7. Bake for 17-20 minutes until the cornbread begins to brown; sprinkle remaining cheese on top and bake for an additional 4-5 minutes.
