  • 1 lb. ground chicken
  • 1 medium onion, diced
  • 1 tablespoon garlic, minced
  • 1 cup baby spinach, chopped
  • 3 tablespoons olive oil
  • 1/2 cup breadcrumbs
  • 1/4 cup Greek yogurt
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Sauté onions in one tablespoon of olive oil over medium heat until translucent. Add garlic and cook for another 30 seconds.
  2. In a mixing bowl, combine sautéed onions and garlic with ground chicken, spinach, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper. Mix well.
  3. Shape the mixture into eight patties about ½ inch thick.
  4. Heat remaining olive oil in the skillet over medium heat and cook patties for approximately 5-6 minutes on each side until golden brown.
  5. Drain on paper towels and serve warm with your choice of garnishes.
