  • 1 tablespoon extra virgin olive oil
  • 1 pound chicken thighs (boneless, skinless cut into bite-sized pieces)
  • 1 medium onion (chopped)
  • 10 ounces mushrooms (any variety, sliced)
  • 1 can lentils (15 oz / 400 g can, drained and rinsed or 1½ cups / 230 g cooked lentils)
  • 1½ cup cooked rice
  • 2 handfuls spinach (or more to taste)
  • 4 tablespoons chicken broth (or water)
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon tomato paste
  • 2 cloves garlic (grated)
  • 1 teaspoon dried oregano (or paprika)
  • ½ teaspoon salt (+ black pepper to taste)

Instructions

  1. In a small bowl, whisk together chicken broth, olive oil, lemon juice, tomato paste, garlic, oregano, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken, season lightly with salt, and cook until golden brown (5-6 minutes). Remove from skillet.
  3. In the same skillet, add onion and mushrooms with a pinch of salt. Sauté until soft (about 5 minutes).
  4. Return chicken to the skillet along with drained lentils and cooked rice. Pour in the prepared sauce and cook for 2-3 minutes until well combined.
  5. Stir in spinach until wilted (1-2 minutes). Adjust seasoning as needed.
