  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 6 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic (minced)
  • 1 cup chicken stock
  • 1 cup heavy cream
  • ½ cup grated parmesan cheese
  • 1 teaspoon chili flakes
  • ¼ teaspoon oregano
  • ¼ teaspoon thyme
  • â…“ cup sundried tomatoes (chopped)
  • Fresh basil leaves

Instructions

  1. Season the sliced chicken breasts with salt and pepper. Dredge in flour, shaking off excess.
  2. Heat olive oil and butter in a large skillet over medium heat. Cook the chicken cutlets for about 4-5 minutes on each side until golden brown. Transfer to a plate.
  3. In the same skillet, sauté minced garlic until fragrant. Add chicken stock and scrape the bottom of the pan.
  4. Lower heat, stir in heavy cream and parmesan cheese, allowing the sauce to simmer for a few minutes.
  5. Mix in chopped sundried tomatoes and return the chicken to the skillet. Simmer until the sauce thickens.
  6. Garnish with fresh basil leaves before serving warm over pasta or rice.
