  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon white grape juice vinegar
  • 1 lemon (zested and juiced)
  • ½ teaspoon sugar
  • ½ teaspoon Dijon mustard
  • 6 cups chopped romaine lettuce
  • ½ cup finely shredded Parmesan cheese
  • 2 to 3 tablespoons toasted pine nuts (optional)

Instructions

  1. Prepare the dressing by combining olive oil, vinegar, lemon juice, zest, Dijon mustard, and sugar in a mason jar. Shake well and set aside.
  2. Toast pine nuts in a small skillet over low heat for 1-2 minutes until fragrant. Remove from heat.
  3. In a serving bowl, toss chopped romaine with three-quarters of the dressing. Season with salt and pepper.
  4. Add most of the Parmesan cheese and toss again to combine.
  5. Top with toasted pine nuts and reserved Parmesan before serving.
