  • ⅓ cup melted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tbsp freshly squeezed lemon juice

  • ½ cup milk
  • 1 cup blueberries (fresh or frozen)
  • For the glaze: 2 tbsp melted butter
  • ½ cup powdered sugar
  • 2 tbsp freshly squeezed lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). Line a loaf pan with parchment paper or grease it with nonstick spray.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, combine melted butter, sugar, vanilla extract, eggs, lemon zest, and lemon juice until well blended.
  4. Gradually add the dry ingredients and milk alternately into the mixture until just combined—avoid overmixing.
  5. Gently fold in the blueberries.
  6. Pour the batter into the prepared pan and bake for 55–60 minutes or until a toothpick inserted comes out clean.
  7. Cool for about 15 minutes before transferring to a platter.
  8. For the glaze, whisk together melted butter, powdered sugar, and lemon juice. Drizzle over the warm loaf.
