  • 10 boneless skinless chicken thighs (about 2.5 pounds)
  • 8 low-carb tortillas
  • 3 cups shredded cheese (cheddar, Colby, Monterey Jack, or a mix)
  • 1 recipe Keto Enchilada Sauce

Instructions

  1. Preheat your oven to 400°F (200°C). Spread 2 tablespoons of enchilada sauce on the bottom of a 9×13 casserole dish. Place the chicken thighs on top and pour another 2 tablespoons of sauce over them.
  2. Bake for 25-35 minutes until the chicken reaches an internal temperature of at least 160°F (70°C). Let cool for 5 minutes before shredding.
  3. In a mixing bowl, combine shredded chicken with half of the cheese. Divide the mixture among the low-carb tortillas and roll them tightly seam-side down in the casserole dish.
  4. Pour remaining enchilada sauce on top and sprinkle with remaining cheese. Bake for an additional 25-30 minutes until bubbly.
