  • 3 pounds boneless skinless chicken thighs
  • 3 tablespoons olive oil, divided
  • 1/2 cup ketchup
  • 1/2 cup Sriracha chili sauce
  • 1/2 cup plus 2 tablespoons honey, divided
  • 1/2 cup water
  • 3 tablespoons lime juice
  • 2 teaspoons grated lime zest
  • 2 teaspoons minced garlic
  • 1 teaspoon ground ginger
  • 1/4 teaspoon pepper
  • 12 mini pretzel buns, split
  • 12 slices part-skim mozzarella cheese, halved
  • 1/4 to 1/2 teaspoon crushed red pepper flakes
  • Coarse salt, optional
  • 2 green onions, chopped
  • 1 cup reduced-fat mayonnaise (for dipping sauce)
  • 2 tablespoons lime juice (for dipping sauce)
  • 2 teaspoons grated lime zest (for dipping sauce)

Instructions

  1. In a Dutch oven over medium heat, brown chicken in 1 tablespoon olive oil for about 5 minutes until lightly browned.
  2. While the chicken is browning, mix ketchup, Sriracha, honey, water, lime juice, lime zest, garlic, ginger, and pepper in a bowl. Pour over browned chicken and bring to a boil.
  3. Reduce heat to low, cover and cook until chicken is tender (about 25-30 minutes), stirring occasionally. Remove chicken from pot; bring sauce back to simmer until thickened (about 5 minutes). Shred the chicken using two forks and toss with reduced sauce.
  4. Preheat oven to 375°F. Place bottom buns in a greased baking dish, add half a slice of cheese on each bun, spoon shredded chicken mixture on top, and top with remaining cheese. Place bun tops back on.
  5. In a small bowl, mix remaining olive oil, honey, and red pepper flakes. Brush this mixture over bun tops; sprinkle with coarse salt if desired.
  6. Bake in preheated oven until tops are golden and cheese is melted (10–15 minutes). Garnish with chopped green onions before serving.
  7. Prepare dipping sauce by mixing mayonnaise, Sriracha, and lime juice in a bowl. Mix well and serve alongside sliders.
