  • 3 pounds boneless skinless chicken thighs
  • 3 tablespoons olive oil, divided
  • 1/2 cup ketchup
  • 1/2 cup Sriracha chili sauce
  • 1/2 cup plus 2 tablespoons honey, divided
  • 1/2 cup water
  • 3 tablespoons lime juice
  • 2 teaspoons grated lime zest
  • 2 teaspoons minced garlic
  • 1 teaspoon ground ginger
  • 1/4 teaspoon pepper
  • 12 mini pretzel buns, split
  • 12 slices part-skim mozzarella cheese, halved
  • 1/4 to 1/2 teaspoon crushed red pepper flakes
  • Coarse salt, optional
  • 2 green onions, chopped
  • 1 cup reduced-fat mayonnaise (for dipping sauce)
  • 2 tablespoons Sriracha chili sauce (for dipping sauce)
  • 2 tablespoons lime juice (for dipping sauce)
  • 2 teaspoons grated lime zest (for dipping sauce)

Instructions

  1. In a Dutch oven over medium heat, brown the chicken in 1 tablespoon of olive oil for about 5 minutes until lightly golden.
  2. While the chicken is browning, in a bowl, mix together ketchup, Sriracha chili sauce, 1/2 cup honey, water, lime juice and zest, minced garlic, ground ginger, and pepper. Pour this mixture over the browned chicken and bring everything to a boil.
  3. Reduce heat to low, cover the pot and cook for 25–30 minutes until the chicken is tender. Remove the chicken from the pot; bring the sauce back to a simmer until it thickens (about 5 minutes). Shred the cooked chicken using two forks and toss it back into the thickened sauce.
  4. Preheat your oven to 375°F. Place the bottom halves of pretzel buns in a greased baking dish. Lay half slices of cheese on each bun half. Spoon generous amounts of shredded chicken mixture over cheese. Top with remaining cheese and close with bun tops.
  5. Mix remaining olive oil with honey and crushed red pepper flakes; brush this mixture over bun tops. If desired, sprinkle with coarse salt. Bake for 10–15 minutes until tops are golden brown and cheese has melted.
  6. Garnish sliders with chopped green onions before serving. Serve with Sriracha-lime dipping sauce on the side for an extra kick!
