  • 1 lb broccoli
  • 1 Vidalia onion
  • 2 medium carrots
  • 3 large garlic cloves
  • 2 tbsp olive oil
  • 1/4 cup all-purpose flour
  • 3 cups chicken stock (or vegetable broth)
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded Italian cheese mix
  • 1/4 cup fresh grated Parmesan cheese

Instructions

  1. Dice broccoli into small pieces and steam until tender (about 1.5 minutes in the microwave).
  2. In a medium pot, heat olive oil and sauté diced onion and shredded carrots until onion is transparent.
  3. Add minced garlic and sauté until fragrant.
  4. Sprinkle flour over the vegetables and mix well.
  5. Gradually add chicken stock while stirring continuously; heat through before adding heavy cream.
  6. Season with salt, crushed red pepper flakes, parsley, and oregano; stir to combine.
  7. Simmer gently before adding cheeses gradually until melted.
  8. Mix in steamed broccoli, cook for an additional 7-10 minutes on low heat.
  9. Serve warm topped with extra grated Parmesan cheese.
