  • 2 cups chicken or vegetable stock
  • 2 shallots
  • 1/3 cup olive oil
  • 5 cups arugula
  • 1 large apple (crisp variety)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard

Instructions

  1. Rinse quinoa under cold water. In a medium saucepan, combine quinoa and stock, bringing to a boil. Reduce heat and simmer for 15-20 minutes until liquid is absorbed. Transfer to a bowl to cool.
  2. In a small pan over medium heat, fry sliced shallots in olive oil for about 15-20 minutes until golden brown. Remove from heat and drain excess oil using a sieve.
  3. In the same bowl used for the cooled oil, whisk together apple cider vinegar, honey, Dijon mustard, salt, and pepper.
  4. In a large salad bowl, mix quinoa, arugula, diced apple, toasted pepitas, parsley, and fried shallots. Drizzle with vinaigrette and toss gently.
