  • 1 lb ground chicken
  • 1 small red bell pepper
  • 1 cup chopped spinach
  • 1/2 red onion, chopped
  • 1 tbsp chopped dill
  • 2 cloves garlic, minced
  • 1 tbsp Mediterranean citrus seasoning mix
  • 1/4 cup mayo
  • 2 tbsp Greek yogurt
  • juice of 1/2 lime
  • 1 clove garlic, grated
  • 1/4 cup chopped scallions
  • 1/2 cucumber, grated (squeeze out all the extra liquid)
  • salt and pepper to taste
  • 1/2 bag of coleslaw mix
  • Buns of choice
  • Hummus of choice

Instructions

  1. In a mixing bowl, combine ground chicken, diced red bell pepper, spinach, chopped red onion, dill, minced garlic, and Mediterranean seasoning. Form into patties.
  2. Preheat grill to medium-high heat and cook patties for about 5-6 minutes per side until internal temperature reaches 165°F (74°C).
  3. For the tzatziki slaw, mix mayo, Greek yogurt, dill, lime juice, grated garlic, scallions, cucumber, salt, and pepper in a bowl.
  4. Toast buns lightly on the grill; spread hummus on the bottom bun and top with grilled patty and tzatziki slaw.
