  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Zest and juice of 1 lemon
  • 2 cups chicken broth
  • 1 cup long-grain rice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pat the chicken dry and rub with olive oil. Season both sides with oregano, garlic powder, onion powder, lemon zest, salt, and pepper.
  3. Heat a large oven-safe skillet over medium-high heat and sear the chicken for 4-5 minutes on each side until golden brown. Remove from skillet.
  4. In the same skillet, add chicken broth and lemon juice, scraping any browned bits from the bottom. Stir in rice evenly.
  5. Return the chicken to the skillet on top of the rice mixture. Cover and bake for 20-25 minutes until cooked through.
  6. Let sit for 5 minutes before serving, garnished with fresh parsley.
