  • 19 oz frozen cheese tortellini (thawed)
  • 2 Tbsp olive oil
  • 3 garlic cloves (minced)
  • 1 lb uncooked medium shrimp (peeled and deveined)
  • 1 1/2 cups peas
  • 1/2 tsp salt
  • 1/2 tsp dried thyme
  • 1/4 tsp pepper

Instructions

  1. Cook the tortellini according to package instructions. In the last 5 minutes of cooking, add the peas. Drain both when done.
  2. While the tortellini cooks, heat olive oil in a large skillet over medium-high heat. Add shrimp and cook for about 2 minutes until they start to turn pink. Then add minced garlic and cook for another 2 minutes until shrimp are fully cooked.
  3. Combine the drained tortellini and peas with the shrimp in the skillet. Stir in salt, thyme, and pepper, tossing well to coat before serving.
