  • 1 cup heavy cream
  • ¾ cup freshly grated Parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes (optional)
  • 2 tbsp chopped fresh parsley

Instructions

  1. Cook rigatoni according to package instructions until al dente. Reserve ½ cup pasta water, then drain.
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, and Italian seasoning; cook until golden brown (5-7 minutes). Remove from skillet.
  3. In the same skillet, melt butter and sauté minced garlic until fragrant (about 30 seconds). Pour in chicken broth and simmer for 2 minutes.
  4. Stir in heavy cream; let simmer for 3-4 minutes until slightly thickened. Add Parmesan cheese, mixing until smooth; adjust consistency with reserved pasta water if necessary.
  5. Return chicken to skillet, toss to coat with sauce, then add rigatoni and mix well; simmer for another 1-2 minutes.
  6. Serve garnished with fresh parsley and extra Parmesan if desired.
