  • 4 boneless, skinless chicken breasts
  • 1 cup uncooked white rice
  • 1 can (10.5 oz) condensed French onion soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (14.5 oz) chicken broth
  • 1 packet (1 oz) dry onion soup mix
  • 2 tablespoons unsalted butter, melted
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine uncooked rice, French onion soup, cream of mushroom soup, and chicken broth; stir until well mixed.
  3. Pour half the mixture into a greased 9×13 inch baking dish and spread evenly.
  4. Season chicken breasts with salt and pepper; place on top of the rice mixture.
  5. Pour remaining rice mixture over chicken to cover completely.
  6. Sprinkle dry onion soup mix on top for added flavor.
  7. Cover with aluminum foil and bake for 1 hour.
  8. Remove foil, sprinkle mozzarella and cheddar cheese on top, then bake uncovered for another 10-15 minutes until cheese is golden and bubbly.
  9. Let cool slightly before serving.
