  • 1 lb penne (or preferred pasta)
  • 1/2 cup olive oil
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 2 pints grape tomatoes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 6 cloves garlic, thinly sliced
  • 1 cup chicken broth
  • 2 cups fresh spinach

Instructions

  1. Boil salted water in a large pot.
  2. In a wide pot, heat olive oil over medium heat and add crushed red pepper flakes, tomatoes, salt, and pepper. Cook until tomatoes burst (about 9-10 minutes).
  3. Stir in garlic and cook for 1 minute. Add chicken broth; bring to boil then simmer for 5 minutes. Add spinach until slightly wilted.
  4. Cook penne in boiling water until al dente (9-10 minutes).
  5. Drain pasta (reserve some water), toss with sauce, and adjust seasoning if needed.
  6. Serve immediately with optional cheese topping.
