  • 10 ounces cream of chicken soup
  • 4.5 ounces green chiles
  • 1 tablespoon taco seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 10 ounces Rotel
  • 15 ounces black beans (canned, drained and rinsed)
  • 15 ounces refried beans (canned)
  • 15 ounces whole kernel corn (canned)
  • 3 cups shredded cooked chicken
  • 2 cups Colby Jack cheese
  • 4 cups tortilla chips or Doritos (whole or crushed)
  • cilantro (for garnish)
  • more chips (crushed, for garnish)
  • green onions (for garnish)
  • sour cream (add after baking)
  • avocado (for serving)
  • hot sauce (for serving)
  • tomatoes (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine cream of chicken soup, taco seasoning, garlic powder, and onion powder; whisk until smooth.
  3. Spray a 9×13-inch baking dish with non-stick spray. Crumble about 1/2 cup of tortilla chips into the bottom.
  4. Layer half of the shredded chicken over the chips, followed by half of the creamy sauce mixture, refried beans, Rotel tomatoes, corn, black beans, and half of the cheese.
  5. Repeat the layering process with remaining ingredients and top with extra cheese.
  6. Bake for 35-40 minutes until bubbly and golden brown on top.
  7. Garnish with cilantro, avocado, sour cream, green onions, crushed chips, or tomatoes before serving.
