  • 6 medium-large carrots (approx 700 grams)
  • 2 tbsp extra virgin olive oil
  • 2 large garlic cloves, minced
  • 2 tsp smoked paprika
  • 1 tsp cumin powder
  • ½ tsp chili powder or red pepper flakes (to taste)
  • Handful fresh parsley, finely chopped
  • Pinch of sea salt
  • 70 grams freshly grated parmesan cheese

Instructions

  1. Preheat your oven to 200°C/400℉.
  2. Peel the carrots and slice them in half lengthwise, then cut each half into quarters for flat sides.
  3. In a mixing bowl, combine the carrots with olive oil, garlic, smoked paprika, cumin powder, chili powder, parsley, and sea salt. Toss until well coated.
  4. Sprinkle some grated parmesan cheese onto a non-stick baking sheet and coat the flat sides of the carrots in cheese before placing them cheese-side down on the sheet.
  5. Roast in the oven for 20–25 minutes until fork-tender and crispy.
