  • 12 oz Rotini Pasta, dry
  • 2 pieces Boneless, skinless chicken breasts
  • 3 tbsp Butter, divided
  • 3 cloves Garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp Garlic powder
  • Salt and black pepper to taste
  • 1 cup Heavy cream
  • 1/2 cup Chicken broth
  • 1 cup Grated Parmesan cheese
  • 1/2 cup Shredded mozzarella cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the rotini in salted boiling water until al dente (8–10 minutes). Drain and set aside.
  2. Season chicken breasts with Italian seasoning, garlic powder, salt, and black pepper.
  3. In a skillet over medium heat, melt 2 tablespoons of butter. Sear the chicken for about 5–6 minutes on each side until golden brown. Remove from the skillet and let rest before slicing.
  4. In the same skillet, melt the remaining butter and sauté minced garlic until fragrant (30–60 seconds).
  5. Add chicken broth and heavy cream, stirring to combine and simmer lightly.
  6. Stir in grated Parmesan cheese and shredded mozzarella until melted. Adjust sauce consistency with reserved pasta water if necessary.
  7. Add cooked rotini to the skillet, tossing to coat evenly in sauce for about 1–2 minutes before serving.
  8. Plate the sauced rotini topped with sliced chicken and garnish with freshly chopped parsley.
