  • 12 Tbsp vegetable oil for cooking
  • 14 oz chicken tenders
  • 8 oz baby bella mushrooms
  • salt
  • fresh cracked black pepper
  • 1 tsp garlic powder
  • 1 cup chicken stock
  • 1/2 cup heavy whipping cream
  • 2 tsp fresh thyme
  • 1 Tbsp cornstarch
  • 2 cups shredded Italian cheese mix

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×9 casserole dish.
  2. Sauté seasoned chicken tenders in vegetable oil until fully cooked; set aside.
  3. In the same pan, sauté sliced mushrooms until golden brown; remove from heat.
  4. In a mixing bowl, combine diced chicken, cooked rice, sautéed mushrooms, and shredded cheese.
  5. Prepare the sauce by heating chicken stock and cream; stir in cornstarch mixture until thickened.
  6. Mix sauce into the rice mixture and transfer to the casserole dish; top with remaining cheese.
  7. Bake for 18-20 minutes until bubbly and golden brown.
