  • 2 cups broccoli florets (fresh or frozen)
  • 1 cup long-grain white rice (uncooked)
  • 3 cups vegetable broth or chicken broth
  • 1 cup shredded cheddar cheese
  • 1 cup cream of mushroom soup (or cream of broccoli soup)
  • 1/2 cup sour cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil or butter (for greasing the baking dish)
  • 1/2 cup crushed crackers or breadcrumbs (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. If using fresh broccoli, chop into small florets; if using frozen, thaw and drain.
  3. In a medium saucepan, bring the broth to a boil, add the rice, cover, and simmer for 15–18 minutes until tender.
  4. In a large mixing bowl, combine the cooked rice, broccoli, cheddar cheese, cream soup, sour cream, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
  5. Grease a 9×13-inch baking dish with olive oil or butter.
  6. Pour the mixture into the baking dish and spread evenly.
  7. Optional: Top with crushed crackers or breadcrumbs for added crunch.
  8. Cover with foil and bake for 25 minutes; then remove the foil and bake for another 10–15 minutes until bubbly.
