  • 2 pounds jumbo shrimp (peeled and deveined)
  • 1 lb linguine
  • 2 cups heavy cream
  • 1 cup grated parmesan cheese
  • 1/2 cup chopped parsley
  • 1/2 cup chopped tomatoes
  • 1/2 cup finely diced red onion or shallot
  • 1 tbsp garlic paste or chopped garlic
  • 1/3 cup vegetable oil (for frying)
  • 2 tbsp melted butter
  • 1 tsp cajun seasoning
  • 1 tsp lemon pepper
  • Kosher salt to taste
  • 1 cup plain panko breadcrumbs
  • 1/2 tsp cajun seasoning
  • 1/2 tsp lemon pepper
  • 1 tbsp lemon juice
  • 1 tbsp fresh lemon zest

Instructions

  1. Cook the linguine according to package instructions, drain, and set aside.
  2. Season shrimp with cajun seasoning, lemon pepper, and salt. Bread with panko breadcrumbs.
  3. Heat oil in a frying pan and shallow fry shrimp until golden brown on both sides then transfer to a cooling rack.
  4. In a large skillet, sauté red onion or shallot, parsley, tomatoes, and garlic in melted butter until fragrant.
  5. Deglaze with fruit juice and allow to cook off for one minute.
  6. Add heavy cream to the skillet; bring to simmer and season with salt, pepper, cajun seasoning, cheese, lemon juice, and zest. Allow to thicken.
  7. Toss cooked linguine in the sauce before serving topped with fried shrimp.
