  • 3/4 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 56 ounces dark chocolate (coarsely chopped)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a food processor, combine half the almonds with 1 tablespoon of sugar; pulse until finely ground. Mix in flour, baking powder, and salt.
  3. In an electric mixer, whisk eggs, vanilla extract, and remaining sugar until thick and fluffy (about 3 minutes). Gradually add the flour mixture until combined.
  4. Stir in remaining almonds by hand and form two rectangular loaves on the baking sheet.
  5. Bake for 23-25 minutes until lightly golden; let cool before slicing into cookies about 1 inch wide.
  6. Lower oven temperature to 325°F (160°C) and bake sliced cookies for another 20 minutes until crisp.
  7. For the chocolate dip, melt chopped chocolate in the microwave; dip each biscotti bottom and allow to set on parchment.
