  • 2 boneless skinless chicken breasts
  • 300g sliced mushrooms
  • 1/2 cup low-sodium chicken or vegetable stock
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 2 tbsp unsalted butter
  • 2 garlic cloves
  • 1/2 tsp salt
  • black pepper
  • 1/4 cup flour

Instructions

  1. Cut chicken breasts in half horizontally; season with salt, pepper, and flour.
  2. In a non-stick frying pan, melt butter and cook the chicken on medium-high heat for about 2.5 minutes per side until golden brown. Remove and keep warm.
  3. In the same pan, add more butter and sauté the mushrooms for about 4 minutes until golden.
  4. Stir in minced garlic; cook for an additional minute.
  5. Deglaze the pan with dry white grape juice, scraping up any bits.
  6. Add chicken stock; simmer until reduced by half.
  7. Stir in heavy cream; simmer until slightly thickened before mixing in parmesan cheese.
  8. Return the chicken to the sauce briefly before serving.
