  • 1 package (16 oz) cornbread mix
  • 3/4 cup milk
  • 1 large egg
  • 1 can (7 oz) diced green chiles
  • 1 can (14.5 oz) creamed corn
  • 1 can (10 oz) green enchilada sauce
  • 2 tbsp taco seasoning
  • 3 cups chopped rotisserie chicken
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly spray a 9×13-inch baking dish with non-stick cooking spray.
  2. In a large mixing bowl, combine cornbread mix, milk, egg, diced green chiles, half of the taco seasoning, and creamed corn. Stir until just combined.
  3. Spread the mixture evenly in the prepared baking dish and bake for 20-25 minutes until golden brown.
  4. While baking, mix chopped chicken with remaining taco seasoning in a separate bowl.
  5. Once the base is baked, pierce holes in it using a wooden skewer and pour enchilada sauce evenly over the top.
  6. Layer seasoned chicken over the casserole base and top with shredded cheddar and Monterey Jack cheese.
  7. Return to the oven and bake for an additional 15 minutes or until cheese is melted and bubbly.
  8. Allow to rest for 5 minutes before slicing and serving with your favorite garnishes.
