  • 2 large chicken breasts
  • 1 Tbsp olive oil
  • 3 cups low sodium chicken stock
  • 1 cup heavy whipping cream
  • 1216 oz orzo pasta
  • 3 cups loosely packed baby spinach leaves, coarsely chopped
  • 2 cups cherry or grape tomatoes
  • 1 1/2 cups shredded mozzarella cheese
  • 2/3 cup grated or shredded parmesan cheese
  • 5 medium garlic cloves, minced
  • 1 Tbsp lemon juice
  • 1 tsp fine sea salt
  • 1 tsp freshly cracked black pepper
  • 1/2 tsp dried oregano

Instructions

  1. Preheat your oven to 375°F and grease a 9×13 casserole dish.
  2. Season chicken breasts with salt and pepper. Sauté in olive oil until golden brown and cooked through (about 8 minutes).
  3. In the casserole dish, mix together chicken stock, heavy cream, orzo, diced chicken, spinach, tomatoes, half of each cheese, garlic, lemon juice, salt, pepper, and oregano until well combined.
  4. Bake for 40-45 minutes until orzo is tender. Sprinkle remaining cheese on top before serving.
