  • 9 lasagna noodles (cooked al dente)
  • 4 cups shredded rotisserie chicken
  • 1 Tbsp olive oil
  • 1 medium onion (finely chopped)
  • 3 garlic cloves (minced)
  • 4 Tbsp unsalted butter
  • 1/3 cup all-purpose flour
  • 2 1/2 cups chicken broth
  • 1 1/2 cups half and half
  • 5 oz fresh spinach (coarsely chopped)
  • 2 tsp sea salt
  • 1/2 tsp black pepper
  • 15 oz ricotta cheese
  • 1 large egg
  • 1/4 cup parsley
  • 1/4 cup parmesan cheese
  • 3 cups mozzarella cheese (divided)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large pot, heat olive oil over medium heat. Sauté onion and garlic until soft. Stir in butter until melted, then whisk in flour until smooth.
  3. Gradually add chicken broth while stirring continuously until thickened. Mix in half and half, then add spinach, salt, and pepper; stir until spinach wilts.
  4. In a mixing bowl, combine ricotta cheese, egg, parsley, and parmesan cheese; mix well.
  5. In a baking dish, layer: sauce, noodles, half of the chicken mixture, half of the cheese mixture; repeat layers ending with noodles on top.
  6. Pour remaining sauce over noodles and sprinkle reserved mozzarella on top.
  7. Cover with foil and bake for 30 minutes; remove foil and bake another 15 minutes or until bubbly.
