  • 2 cups chopped cooked chicken
  • 1 1/2 cups low sodium chicken broth
  • 1/2 cup pineapple juice
  • 2 tablespoons soy sauce (gluten-free if necessary)
  • 1/2 teaspoon salt
  • 1 cup long grain white rice
  • 391 ml canned pineapple tidbits (drained)
  • 2 green onions (sliced)

Instructions

  1. In a large skillet, combine the chicken, chicken broth, pineapple tidbits, pineapple juice, soy sauce, and salt. Bring to a boil over medium-high heat.
  2. Rinse the rice under cold water until clear using a fine mesh sieve.
  3. Stir the rinsed rice into the skillet mixture. Cover and reduce heat to medium-low. Cook for about 10 minutes, then stir again. Cover and continue cooking for another 5-10 minutes until rice is tender.
  4. Mix in sliced green onions before serving hot.
