  • 4 slices turkey sausage (diced)
  • 6 Brussels sprouts (trimmed and thinly sliced)
  • 1/3 cup grated cheddar cheese
  • 2/3 cup milk (room temperature)
  • 3 eggs (room temperature)
  • 2/3 cup all-purpose flour
  • Pinch of kosher salt
  • Pinch of black pepper
  • Pinch of smoked paprika
  • Pinch of garlic powder
  • Pinch of onion powder
  • 1 tablespoon butter

Instructions

  1. Preheat your oven to 450°F (232°C) and place a cast iron skillet inside.
  2. In a medium skillet over medium-high heat, cook diced turkey sausage until crispy, then set aside.
  3. Sauté Brussels sprouts in the same skillet for about 1-2 minutes until softened; set aside with the sausage.
  4. Whisk together eggs and milk in one bowl; in another bowl, combine flour and spices.
  5. Mix both bowls together until just combined; remove the hot skillet from the oven and add butter.
  6. Pour batter into the skillet, top with cheddar cheese, and bake for about 20 minutes until golden brown.
  7. Serve warm topped with sautéed Brussels sprouts and turkey sausage.
