  • 1 tbsp butter
  • 1 tbsp olive oil
  • 2 shallots or 1 onion, finely diced
  • 2 green bell peppers, finely diced
  • 3 garlic cloves, minced
  • 1 tbsp Cajun seasoning
  • 1 tsp celery salt
  • 1 tsp garlic & herb seasoning or garlic powder
  • 2 tsp dried parsley
  • ½ tsp salt
  • 1 lb ground beef (lean beef mince recommended)
  • 1 ½ cups orzo pasta
  • 2 tbsp tomato purée or concentrated tomato paste
  • 3 â…“ cups beef broth
  • 3 tbsp cheddar cheese, grated plus extra to serve
  • 1 red jalapeño, sliced (optional)
  • Fresh thyme for serving

Instructions

  1. In a large skillet, heat butter and olive oil over medium-low heat. Sauté diced shallots and green bell peppers for 5 minutes until softened. Add minced garlic, Cajun seasoning, celery salt, garlic & herb seasoning, dried parsley, and salt; stir.
  2. Increase heat slightly, add ground beef, breaking it up as it browns.
  3. Stir in orzo pasta and toast for 2 minutes.
  4. Mix in tomato purée and beef broth; bring to a boil then simmer until orzo is tender (15–20 minutes).
  5. Remove from heat and stir in grated cheddar cheese until melted. Adjust seasoning if needed.
  6. Serve garnished with fresh thyme and sliced jalapeño.
