  • 12–14 soft caramel candies (unwrapped) or ½ cup caramel baking bits
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon white sugar (for sprinkling)
  • Optional: A pinch of flaky sea salt
  • Optional: ½ teaspoon espresso powder
  • Optional: ¼ cup finely chopped pecans or walnuts

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together softened butter, brown sugar, and white sugar until fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking soda, ground cinnamon, and salt; then mix into the wet ingredients until just combined.
  5. Divide the dough into portions, flatten slightly, place caramel in the center, and wrap the dough around it.
  6. Roll each cookie ball in a mixture of brown sugar and cinnamon.
  7. Arrange on the baking sheet spaced apart and sprinkle lightly with white sugar.
  8. Bake for 10–12 minutes until edges are golden; cool before serving.
