1 1/2 cups cooked rice (preferably day-old)
1 chicken breast, diced
2 eggs, beaten
1/2 cup diced carrots
1/3 cup green peas
2 cloves garlic, minced
2 green onions, sliced (for garnish)
2 to 3 tablespoons soy sauce
1 tablespoon oil (plus more as needed)
1/4 cup mayonnaise
2 tablespoons sweet chili sauce
1 tablespoon Sriracha (adjust to taste)
1 teaspoon rice vinegar
In a small bowl, mix mayonnaise, sweet chili sauce, Sriracha, and rice vinegar to create the bang bang sauce. Set aside.
Heat oil in a large skillet over medium-high heat and cook the diced chicken until browned and fully cooked. Remove from the pan.
In the same pan, scramble the beaten eggs until just set and set aside.
Sauté carrots and garlic in the pan for about 2–3 minutes until softened. Add green peas and cook for an additional minute.
Stir-fry cold rice in the pan on high heat for about 3–4 minutes until heated through.
Return chicken and scrambled eggs to the pan; mix well.
Pour soy sauce over the mixture and stir thoroughly before adding the prepared bang bang sauce; mix until everything is well coated and heated through.
Garnish with sliced green onions before serving.
