  • 200g block of feta cheese
  • 3 tbsp olive oil
  • 300g baby plum or cherry tomatoes (halved)
  • 200g asparagus (sliced)
  • 2 cups uncooked orzo pasta
  • 100g baby spinach (roughly diced)
  • Fresh basil and chives (for garnishing)
  • 2 heaped tbsp mascarpone cheese
  • Salt and black pepper to taste

Instructions

  1. Preheat the oven to 200C/390F.
  2. Place the feta in a large oven-safe pan, drizzle with 1 tbsp olive oil, and bake for about 8 minutes until softened.
  3. Add asparagus and tomatoes around the feta, drizzle with remaining olive oil, season with black pepper, then bake for an additional 12-15 minutes until golden.
  4. Meanwhile, cook the orzo in salted boiling water until al dente. Drain using a sieve over a bowl to reserve starchy water.
  5. Mash the baked feta into a smooth consistency, then mix in cooked orzo and baby spinach, adding reserved starchy water as needed until creamy.
  6. Stir in fresh herbs and mascarpone cheese; adjust seasoning before serving.
