  • 1 cup cooked pearl couscous
  • 1/3 cup dried cranberries
  • 1/3 cup pecans
  • 1/4 red onion, thinly sliced
  • 1 cup kale leaves, chopped
  • 1 cup butternut squash, pan-fried or roasted
  • 1/4 cup olive oil
  • 2 tbsp spicy brown mustard
  • 2 tbsp lemon juice
  • 2 tbsp fresh orange juice
  • 2 tbsp honey
  • 2 tbsp apple cider vinegar
  • 1 tsp garlic, crushed
  • Salt and pepper to taste

Instructions

  1. Prepare the dressing by combining olive oil, spicy brown mustard, lemon juice, orange juice, honey, apple cider vinegar, garlic, salt, and pepper in a mixing bowl. Shake or stir until well blended.
  2. Massage chopped kale with one spoonful of dressing until tender.
  3. Add cooked pearl couscous, cranberries, pecans, red onion, and butternut squash to the kale. Drizzle in about one-third cup of dressing and toss until evenly coated.
  4. Serve cold or at room temperature. Store leftovers in an airtight container in the fridge.
