  • 1 tablespoon olive oil
  • 2 cloves garlic (minced)
  • 1 cup onion (diced)
  • 1 1/2 cups black beans (drained)
  • 1 1/2 cups corn (drained)
  • 1 1/2 cups spinach (packed)
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper
  • 1 1/41 1/2 cups shredded cheese (cheddar or pepper jack)
  • 2 large flour tortillas

Instructions

  1. Heat olive oil in a sauté pan over medium heat. Sauté minced garlic and diced onion for about 2 minutes until softened.
  2. Add chopped spinach and sauté for another 2 minutes until wilted.
  3. Stir in black beans and corn; cook for an additional 5–6 minutes until heated through.
  4. Lower heat and mix in paprika, cumin, kosher salt, and ground black pepper. Stir in cheese until melted.
  5. Warm tortillas in the microwave for about 20 seconds to soften.
  6. Place filling on each tortilla, fold sides in towards center, then roll tightly.
  7. Serve warm with your favorite toppings like salsa or avocado.
