- 2 cloves garlic (minced)
- 1 cup onion (diced)
- 1 1/2 cups black beans (drained)
- 1 1/2 cups corn (drained)
- 1 1/2 cups spinach (packed)
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1/2 teaspoon kosher salt
- 1/8 teaspoon ground black pepper
- 1 1/4 – 1 1/2 cups shredded cheese (cheddar or pepper jack)
- 2 large flour tortillas
- Heat olive oil in a sauté pan over medium heat. Sauté minced garlic and diced onion for about 2 minutes until softened.
- Add chopped spinach and sauté for another 2 minutes until wilted.
- Stir in black beans and corn; cook for an additional 5–6 minutes until heated through.
- Lower heat and mix in paprika, cumin, kosher salt, and ground black pepper. Stir in cheese until melted.
- Warm tortillas in the microwave for about 20 seconds to soften.
- Place filling on each tortilla, fold sides in towards center, then roll tightly.
- Serve warm with your favorite toppings like salsa or avocado.
